Lớp màng bọc tự nhiên trên vỏ trứng có tác dụng như một rào chắn chống lại sự xâm nhập của vi sinh vật để bảo quản trứng được lâu.Nhóm tác giả cho biết, hiện nay, để kéo dài thời gian bảo quản trứng gà, trứng vịt tươi sau khi rửa và tiệt trùng, màng bao được sử dụng phổ biến nhất là dầu khoáng.
